Common Sauce (Hartshorne)

Common Sauce is a multi-purpose sauce that can be used for a number of meat-based dishes and side vegetables. This recipe is an interpreted method from the original recipe in Henry Hartshorne’s the Household Cyclopedia.

Ingredients

  • Veal slices
  • Ham slices
  • 2 onions
  • 2 parsnips
  • 2 cloves of garlic
  • 2 cloves
  • 500 ml broth
  • 175 ml white wine
  • 2 slices of lemon

Procedure

  1. Combine veal, ham, onions, parsnips, garlic, and cloves in a large saucepan.
  2. Add broth, wine, and lemon slices.
  3. Simmer over low heat for 15 to 20 minutes, or until reduced.
  4. Sieve the sauce and serve.
