Kwado (Nigerian Cassava Flour Salad)

Kwado, also called coldmeal, is a Nigerian meal consumed primarily by students in boarding houses. It is prepared without cooking, hence the name ‘coldmeal’.

Ingredients

  • Nigerian smoked dried fish
  • Onions, sliced and rinsed
  • 2 cups garri (cassava flour)
  • 1 kuli kuli, ground
  • Salt to taste
  • Dry pepper to taste

Procedure

  1. Mash the smoked fish in a bowl.
  2. Add the garri, ground kuli kuli, sliced onions, salt, and dry pepper.
  3. Stir the ingredients together and serve.

Notes, tips, and variations

  • You can add some water to moisten the garri if desired.
