Queens Soup

Queen’s Soup, or Zuppa Regina di Riso, is a rice soup. One recipe is as follows.

Ingredients

  • 1 tablespoon ground rice
  • ½ pint (285 ml) milk
  • 1 oz (30 g) butter
  • Fowl (poultry) stock

Equipment

  • Saucepan
  • Bain-marie
  • Sieve

Procedure

  1. Put the ground rice into a saucepan. Gradually add the milk.
  2. Cook gently for 12 minutes in a bain-marie, stirring the whole time, until very smooth.
  3. Add the butter, and pass through a sieve.
  4. Mix the fowl stock, and serve immediately.
