Abacha Mmiri (Soaked Cassava Flakes)

Abacha mmiri (literally “water cassava flakes”), also known as bobozee, is a Nigerian snack prepared from cassava.

Ingredients

  • 1 tuber of cassava
  • 1–2 teaspoons salt, to taste
  • ½ cup fresh coconut pieces
  • ¼ cup palm kernel
  • ¼ cup roasted groundnuts

Procedure

  1. Peel the cassava, then cut into slices 1 cm thick. Rinse well.
  2. Boil the cassava in a large pot of water until cooked through.
  3. Soak the cooked cassava in fresh water overnight. The next day, drain away any remaining water and rinse the cassava well.
  4. Season the cassava to taste with the salt.
  5. Serve the cassava with the coconut, palm kernel, and roasted groundnut.

Notes, tips, and variations

  • The cassava is rinsed after soaking to remove the sour taste that develops.
