Cake Mix Cookies

Cake mix cookies is a delightful, quick recipe. It only takes three ingredients.

Ingredients

  • 1 package (15 oz / 425 g) cake mix (any flavor)
  • 2 eggs
  • 6–7 tablespoons melted butter or vegetable oil
  • Add-ins, such as chocolate chips (optional)

Equipment

  • Baking sheet
  • Baking paper
  • Mixing bowl
  • Spatula, wooden spoon, or electric mixer
  • Ice cream scoop or tablespoon
  • Oven
  • Wire rack

Procedure

  1. Preheat the oven to 180 °C (356 °F). Line a baking sheet with baking paper.
  2. Combine the cake mix, eggs and butter in a large bowl, mixing to form a soft dough. If using, fold in the add-ins.
  3. Scoop tablespoonfuls of dough onto the pan. The dough may be sticky, but chilling the dough for 30 minutes makes them firmer and easier to work.
  4. Bake for 9–11 minutes until set. Transfer to a wire rack and leave them to cool.

Notes, tips and variations

  • For red velvet cake mix cookies, use red velvet cake mix and mix 1 cup (125 g) white chocolate chip into dough.
  • For M&Ms cake mix cookies, use white or yellow cake mix and mix 1 cup (125 g) M&Ms into dough.
  • For lemon cake mix cookies, use lemon cake mix and mix 1 tablespoon lemon zest and 1 tablespoon lemon juice into dough. Roll dough into balls and roll in powdered sugar. Bake as usual. You may need less butter to compensate the extra moisture and make it easier to roll.
  • For snickerdoodle cake mix cookies, use white cake mix, and mix 1 tablespoon ground cinnamon into dough. Roll dough into balls and roll in cinnamon sugar (½ cup granulated sugar mixed with 1 tablespoon ground cinnamon). Bake as usual.
