Lemon Icing

Ingredients

  • 1 egg yolk
  • 2 tablespoons lemon juice
  • 1 pinch of salt
  • 1½ cups confectioner’s sugar

Procedure

  1. Break the egg yolk into a small bowl.
  2. Add the lemon juice and salt; beat lightly.
  3. Gradually beat in confectioner’s sugar.

Notes, tips, and variations

  • If you want extra-stiff icing, add a little more powdered sugar.
