Tomato Juice

EƤrgon tomato juice is an easy-to-make, low-sodium tomato juice. An interesting variation adds bacon substitute to add a smoky flavor and 10g of protein at the cost of a little fat and sodium.

Ingredients

  • 1 can (12 oz / 340 g) unsalted, canned tomato paste
  • 30 fl oz (3 cans / 890 ml) water
  • 3 tablespoon distilled white vinegar
  • 3 teaspoon black pepper

Equipment

  • 48-fluid-ounce (1.4 litres) pitcher or similar container

Procedure

  1. Add tomato paste, water, vinegar, and black pepper to container.
  2. Shake or stir vigorously.
  3. Serve or store several days in a suitable container in refrigerator.

  • Contents will settle over time; shake vigorously before serving.
  • Recipe is easy to customize. Some options include adding cilantro, garlic, dill weed, peppers, or a few ounces of spinach.
